A working wine estate, spa and destination restaurant set among beech-forest hills and lakes inland from Varberg — Halland's clearest choice for a big-occasion meal.

Ästad Vingård sits inland from Varberg near Tvååker, inside the Åkulla beech-forest hills — a landscape of small lakes, old beechwood and rolling farmland that feels a long way from the coastal towns even though it is a short drive from any of them. The estate combines a working vineyard, a spa, guest rooms and a restaurant built to tasting-menu standard, which is an unusual combination in a county otherwise defined by its beaches, and it has become the default answer to "where do we go for the special dinner" for a lot of Halland residents as well as visitors.

The setting is a large part of the appeal. The Åkulla hills are Halland's most substantial stretch of inland forest and lake country, quiet and undeveloped compared with the coast, and Ästad has built its whole identity around that contrast — a slow, rural counterpoint to the beach towns, reachable within half an hour of any of them by car. Arriving from the coast, the shift from open sea views to closed beech canopy and still water is immediate and part of the experience.

The vineyard and wine

Wine growing this far north is a genuine undertaking rather than a novelty act — Sweden's climate sits at the edge of what vines can ripen — and Ästad has built a real, if modest, planting on the slopes around the estate, alongside a wider programme of Swedish and imported wines on its list. The restaurant's wine pairings lean on that estate production where it makes sense and fill in with a broader Swedish and European list elsewhere. As with anywhere in the country, a bottle of Ästad's own wine to take home has to be bought either at the estate's own shop or through Systembolaget, Sweden's state alcohol retail monopoly — supermarkets cannot sell it.

Visitors curious about the vineyard itself, rather than only the restaurant, can generally walk the vine rows as part of a wider look around the estate grounds, and the growing side of the operation is treated as openly as the dining side — this is a working vineyard on display, not a backdrop dressed up for the restaurant's benefit.

The restaurant

The dining room runs a set tasting-menu format built around Halland produce — the county's seafood, root vegetables and game feature heavily, plated with the kind of technique that draws bookings from Gothenburg as much as from the coast. This is unambiguously the special-occasion end of Halland's food scene: multi-course, wine-paired, and priced and paced for a full evening rather than a quick stop. It rewards booking well ahead, particularly for a weekend table in summer, and pairs naturally with an overnight stay given the estate's own rooms and spa.

The kitchen's sourcing story is close to home in a way that is easy to verify simply by looking around the estate: much of what appears on the menu grows or is raised within a short drive, and the seasonal shifts in what is available up in the Åkulla hills and down on the coast show up directly in how the menu changes through the year. It is a genuinely seasonal restaurant rather than one that uses the word loosely.

Spa and rooms

The spa side of the estate runs alongside the restaurant and vineyard, built for a relaxed overnight rather than a day-trip stopover, and the guest rooms make it realistic to treat the whole visit as a single self-contained break rather than a dinner bolted onto a day of sightseeing elsewhere. It sits in the same category as Halland's other spa hotels, though the vineyard and forest setting make it distinct from the coastal spa properties in Varberg and along the beach towns.

Getting there

The estate sits inland among the Åkulla lakes and forest, reached by road from either Varberg or Falkenberg — a car is the practical way in, since the hills here are not served by the coastal rail line. It works well as a stop on a longer inland loop through the beech forest and lake trails, or as a dedicated out-and-back trip built purely around the dinner and spa. Anyone driving out for dinner and wine tasting on the same visit should plan for a designated driver or an overnight stay, since the estate's own rooms are the simplest solution to that problem — a genuine advantage over trying to combine a wine-paired tasting menu with a drive back to the coast the same night.
